Alycia and I put these together for dinner last night, feeding the four of us, and they came together fast enough to be a genuine weeknight option rather than a special-occasion thing. The chicken bites go in the air fryer first since they take the longest -- while those crisp up, there's plenty of time to dice the tomatoes and get everything else laid out. We used Pink Fang and Black Beauty this time, both small heirloom varieties, mostly because that's what we had on hand -- any small tomato works fine here. The romaine came straight from Runway Farm's, which made a noticeable difference in the wrap -- there's just no comparison between that and a bag of pre-washed lettuce from the store. Assembly is simple: romaine, chicken bites, shredded parm, diced tomato, and French fried onions down the center of each tortilla, a drizzle of Caesar dressing, then roll it up tight. Cutting it on a slight bias before serving is a small thing, but it makes the wrap actually look like something instead of just a rolled-up tortilla.
Ingredients
- • 4 (8-10") tortillas
- • Air-fried chicken bites
- • Shredded parmesan cheese
- • 1 small Pink Fang tomato, diced
- • 1 small Black Beauty tomato, diced
- • Runway Farm's romaine lettuce
- • French fried onions
- • Caesar dressing
Steps
- 1.Air fry the chicken bites until cooked through and crispy.
- 2.While the chicken cooks, dice the Pink Fang and Black Beauty tomatoes and chop the romaine.
- 3.Lay out each tortilla and layer romaine, chicken bites, parmesan, diced tomatoes, and French fried onions down the center.
- 4.Drizzle with Caesar dressing.
- 5.Roll the tortilla up tightly, then cut on a slight bias.
- 6.Serve immediately.
Notes
- • Pink Fang and Black Beauty are both small heirloom tomato varieties -- any small tomato works fine if you don't have those specific ones on hand. Romaine came straight from Runway Farm's this time, which made a noticeable difference.
