A classic hearty corn chowder, perfect for most any occasion! The rich, creamy texture is a comforting delight, with each spoonful brimming with tender corn kernels and savory chunks of potato. Ingredients

  • • 6 slices bacon
  • • 1/2 medium onion diced
  • • 1/2 cup celery sliced
  • • 1 1/2 cups potato peeled and diced
  • • 1 bay leaf
  • • 1 tsp thyme
  • • black pepper to taste
  • • 2 cups chicken broth
  • • 3 cups corn fresh or frozen
  • • 1 cup milk
  • • 1/2 cup heavy cream
  • • Shredded cheese

Steps

  1. 1.Cook bacon until crisp. Set aside reserving drippings.
  2. 2.Saute onion and celery over medium heat until tender, about 5 minutes.
  3. 3.Add potato, thyme, bay leaf, pepper and chicken broth. Bring to a boil, reduce heat, cover and let simmer 8 minutes or until potatoes are tender.
  4. 4.Add corn and simmer an additional 2-3 minutes for fresh corn, 5-6 for frozen corn.
  5. 5.Whisk together milk and cream. Add into soup mixture and bring to a boil while stirring. Simmer 2 minutes to thicken. Remove 2-3 cups soup and blend. Stir blended mixture back into the soup.
  6. 6.Remove from heat and stir in half of the bacon. Garnish with remaining bacon and green onions if desired.
