A chicken dish that might make you want to consider a monogamous relationship with the chef behind the pan, be careful (/sarcasm). The dish is a masterpiece of flavor, with each bite a symphony of spices and herbs that dance on your tongue. The chicken is perfectly cooked, tender and juicy, with a crispy skin that crackles satisfyingly when you bite into it. The sauce is a rich, velvety blend of tomatoes, garlic, and a secret blend of spices that you can't quite put your finger on, but it's absolutely divine. The aroma alone is enough to make your mouth water, and the taste is unforgettable. It's a dish that will make you want to savor every moment, every bite, and every sip of the accompanying wine. The chef, whose name is John, has a way with food that's almost magical. His dishes are not just about taste, but about creating an experience. He's passionate about his craft, and it shows in every dish he prepares. If you're looking for a meal that's as much about the journey as the destination, this is the dish for you.

Ingredients

  • • 3 large chicken breasts boneless and skinless, sliced lengthwise into thin cutlets
  • • 1/2 tea salt
  • • 1/4 tea ground black pepper
  • • 6 Tbsp all-purpose flour
  • • 2 Tbsp olive oil
  • • 2 Tbsp unsalted butter
  • • 3 cloves garlic minced
  • • 1 cup chicken stock
  • • 1 cup heavy cream
  • • 1/2 cup parmesan cheese grated
  • • 1 tea chili flakes
  • • 1/4 tea oregano
  • • 1/4 tea thyme
  • • 1/3 cup sundried tomatoes chopped
  • • 1 Tbsp fresh basil leaves

Steps

  1. 1.Season chicken with salt and pepper, then dredge in flour and shake off any excess.
  2. 2.In a large skillet, heat olive oil and melt the butter on medium heat. Swirl pan to coat with oil and butter evenly.
  3. 3.Brown the chicken (do not overcrowd and work in batches if needed) for 4-5 minutes on each side or until golden brown and cooked through. Transfer onto a plate, cover, and set aside.
  4. 4.Saute the garlic for a minute or until it's fragrant. Add the chicken stock and deglaze the pan scraping any bits stuck to the bottom of the pan with a wooden spoon.
  5. 5.Adjust the heat to medium-low and add the heavy cream and the parmesan cheese to the skillet. Allow the sauce to simmer for a couple of minutes, then season with chili flakes, thyme, and oregano.
  6. 6.Season with salt and pepper to your taste, add the sundried tomatoes then put the chicken back in the sauce and let the sauce simmer and thicken for a few more minutes.
  7. 7.Garnish with chopped fresh basil leaves and serve warm over pasta or rice.
