I love making Amish Cheese Chowder because it's so comforting and easy to put together. It's a hearty soup that's perfect for chilly evenings. The recipe is simple: you start by boiling potatoes, carrots, green beans, peas, and corn with chicken broth until everything is tender. Then, you make a creamy sauce with butter and flour, and stir it into the vegetables. Finally, you add shredded cheddar cheese and let it simmer until everything is creamy and delicious. It's a family favorite that everyone loves!
Ingredients
- • 4 cups potatoes, peeled & cubed
- • 1 cup carrots, sliced
- • 1 cup green beans, cut
- • 1 cup peas
- • 1 cup corn
- • 3 Tbsp butter
- • 3 Tbsp flour
- • 3 cups milk
- • 1-2 cups shredded cheddar cheese
- • 1 ½ cups chicken broth
- • Salt & pepper to taste
Steps
- 1.In a large pot, combine potatoes, carrots, green beans, peas, corn, & broth. Bring to boil, then reduce heat and simmer for 15-20 minutes, until tender.
- 2.In separate saucepan, melt butter over medium heat. Stir flour and cook 1-2 minutes.
- 3.Slowly whisk in milk and cook until smooth and thickened (3-5 minutes).
- 4.Pour the creamy mixture into the pot with vegetables and stir well.
- 5.Stir in shredded cheese until melted and creamy.
- 6.Add salt & pepper and simmer another 5-10 minutes.
