I really don't enjoy potato salads all that much. So when I discovered this warm German potato salad at a family gathering up in Wisconsin, I demanded the recipe from a cousin. This German Potato Salad is a classic side dish that's perfect for any barbecue or potluck. It's simple to make and full of flavor. Start by boiling peeled and diced potatoes until they're tender. While the potatoes are cooking, fry bacon until crispy and set it aside to crumble later. Once the potatoes are done, sauté diced onions in the bacon grease until they're golden. Then, add vinegar, sugar, water, salt, and pepper to the pan and bring it to a boil. Once the sauce is bubbling, add the potatoes and half of the crumbled bacon. Cook until everything is heated through, then transfer the warm potato salad to a serving dish and top with the remaining crumbled bacon. Serve immediately and enjoy!
Ingredients
- • 3 cups diced peeled potatoes
- • 4 slices bacon
- • 1 small onion, diced
- • 1/4 cup vinegar
- • 2 Tbsp water
- • 1 1/2 Tbsp white sugar, or more to taste
- • 1 tsp salt
- • 1/8 tsp ground black pepper
Steps
- 1.Place potatoes in a large pot and add water to cover by at least 1-2 inches; bring to boil.
- 2.Cook until potatoes are easily pierced with a fork, about 10 mins. Drain and set aside to cool.
- 3.While potatoes are cooking, place bacon in a large, deep skillet over medium-high heat. Fry until browned and crisp, 10-12 mins, turning as needed. Transfer bacon to a paper towel-lined plate and crumble when cool enough to handle. Leave bacon grease in the skillet.
- 4.Cook onion in the bacon grease over medium heat until browned, 6-8 mins. Add vinegar, sugar, water, salt & pepper to the pan and bring to a boil. Once boiling, add potatoes and 1/2 of the crumbled bacon. Cook until heated through, 3-4 mins. Transfer warm potato salad to a serving dish and sprinkle remaining crumbled bacon over the top.

- • Adjust sugar to taste based on potato sweetness.
