Inspired by classic Chicago Italian beef joints like Buona Beef. If you don't dip it, you're a flavorless coward.

Ingredients

  • 1 beef chuck or bottom round roast
  • Italian beef seasoning (garlic, oregano, basil, black pepper, or a store-bought seasoning packet)
  • Beef broth
  • Italian rolls
  • Giardiniera
  • Bell peppers, sliced

Steps

  1. 1.Season the roast and slow-cook (oven, slow cooker, or braise) in beef broth with Italian seasoning until fork-tender.
  2. 2.Let the meat rest, then slice it as thin as you possibly can, ideally with a slicer.
  3. 3.Return the sliced beef to the seasoned broth (the jus) to soak up flavor and stay juicy.
  4. 4.Griddle the sliced bell peppers until soft and lightly charred.
  5. 5.Pile the beef onto an Italian roll, top with griddled peppers and giardiniera.
  6. 6.Dip the whole sandwich into the jus before eating -- if you're not dipping it, you're a flavorless coward.
