These make a great, easy-to-toss-together meal, and the combinations are basically endless. Get out there and try more grains -- they're good for you and can taste phenomenal too.

Ingredients

  • Del Real Birria and Cheese Pupusas (from Costco, or whatever flavor you have)
  • Cooked quinoa (hot or cold)
  • Fresh veggies: guacamole, bell peppers, lime, etc.
  • Tomatoes, bell peppers, and jalapenos, for fire-roasting
  • Optional: sour cream, cilantro, rice, or any other toppings you like

Steps

  1. 1.Cook the pupusas according to the package instructions.
  2. 2.To fire-roast the vegetables, place whole tomatoes, bell peppers, and jalapenos under the broiler or in a very hot oven, turning occasionally, until charred and blistered on all sides. Let cool slightly, then chop.
  3. 3.Build the bowl: start with a base of quinoa (hot or cold, your choice), top with the pupusas, then layer on the fire-roasted vegetables and any fresh toppings -- guacamole, lime, sour cream, cilantro, rice, whatever sounds good.
  4. 4.Mix and enjoy.
