A quick and flavorful side dish inspired by Mexican street corn, perfect for summer gatherings, this Easy Off the Cob Mexican Street Corn is a delightful twist on a classic street food favorite. The corn is first grilled to perfection, developing a smoky flavor that complements the vibrant spices. Once grilled, the corn is slathered with a creamy, tangy cilantro lime butter that adds a burst of fresh, zesty flavor. The dish is then garnished with a sprinkle of cotija cheese, which adds a salty, tangy kick that balances the sweetness of the corn. The result is a simple yet satisfying side that's sure to be a hit at any summer barbecue or family gathering. The bright colors of the corn, the creamy yellow of the butter, and the sharp white of the cotija cheese make it a visually appealing addition to any table. The smoky aroma of the grilled corn and the tangy scent of the cilantro lime butter fill the air, making it impossible to resist.
