Simple, fast, and forgiving on timing -- marinate ahead, then it's just a few minutes a side once the pan or grill is hot enough.

Ingredients

  • Steak(s) of your choice
  • Equal parts soy sauce and Worcestershire sauce (enough to submerge the steak)
  • A few cloves of garlic, minced or smashed
  • A squeeze of lemon juice (optional, helps tenderize)
  • Salt, to taste before cooking

Steps

  1. 1.Combine equal parts soy sauce and Worcestershire sauce in a bowl or zip-top bag, then add the garlic and a squeeze of lemon juice.
  2. 2.Add the steak and make sure it's well coated. Marinate for at least an hour, though overnight in the fridge gives the best flavor.
  3. 3.Remove the steak from the marinade and pat it dry, then season with a touch of salt right before cooking.
  4. 4.Heat a skillet or grill until it's ripping hot, around 500°F.
  5. 5.Cook the steak for 3-5 minutes per side depending on thickness and how done you like it -- for blue/rare, about 2.5 minutes per side is plenty.
  6. 6.Let the steak rest for 5-15 minutes before slicing and serving.

Notes

  • Servings scale with however many steaks you're cooking.
