Simple, fast, and forgiving on timing -- marinate ahead, then it's just a few minutes a side once the pan or grill is hot enough.
Ingredients
- • Steak(s) of your choice
- • Equal parts soy sauce and Worcestershire sauce (enough to submerge the steak)
- • A few cloves of garlic, minced or smashed
- • A squeeze of lemon juice (optional, helps tenderize)
- • Salt, to taste before cooking
Steps
- 1.Combine equal parts soy sauce and Worcestershire sauce in a bowl or zip-top bag, then add the garlic and a squeeze of lemon juice.
- 2.Add the steak and make sure it's well coated. Marinate for at least an hour, though overnight in the fridge gives the best flavor.
- 3.Remove the steak from the marinade and pat it dry, then season with a touch of salt right before cooking.
- 4.Heat a skillet or grill until it's ripping hot, around 500°F.
- 5.Cook the steak for 3-5 minutes per side depending on thickness and how done you like it -- for blue/rare, about 2.5 minutes per side is plenty.
- 6.Let the steak rest for 5-15 minutes before slicing and serving.
